2 C. shredded raw zucchini
3 C. flour
1 C. cooking oil
2 C. white sugar
1/2 C. brown sugar
1 tsp. baking soda
1/2 C nuts
1/2 tsp. baking powder
11/2 tsp. vanilla
3 eggs
1/2 tsp. salt
3 tsp. cinnamon
Beat eggs until foamy; add oil, sugars, vanilla and zucchini. Add dry ingredients and stir until moistened. Put in two greased and floured loaf pans. Bake at 325 degrees for 1 hour.
